Tomapure grape tomatoes tartar

1 oz (35 mL) ricotta cheese
2 tablespoons milk (30 mL)
1 tablespoon (15 mL) finely chopped cilantro
½ French shallot, thinly sliced
1 tablespoon (15 mL) of olive oil
1 teaspoon (5 mL) of sherry vinegar
1 tub (320 g) Tomapure grape tomatoes, cut into 4
Salt and pepper
Using a mixer or whisk, whip the cheese and milk into a light cream.
Add cilantro and mix for an additional 20 seconds.
Add the shallot, olive oil, vinegar and tomatoes.
Season and mix well using a spatula.
Serve on leaves of Boston lettuce with croutons.
