Tomapure grape tomatoes pasta ratatouille
Preparation time: 20 to 30 minutes
Cooking time: 35 to 40 minutes
Approximately 1 lb (500 g) tagliatelle or fettuccine
1 large eggplant, cut into cubes
Two zucchinis, cut into cubes
1 onion, cut into cubes
1 red pepper, seeded, cubed
1 green pepper, seeded, cubed
2 tablespoons (30 mL) of olive oil
1 tub (320 g) of Tomapure grape tomatoes
3 sprigs of fresh thyme
3 garlic cloves, minced (2 teaspoons of garlic from a jar)
Parmesan shavings for garnish
Salt and pepper, to taste
In a large pot, cook the pasta in boiling salted water until al dente.
Drain and lightly oil. Set aside.
Sauté the eggplant, zucchinis, onion and peppers in olive oil for 10 minutes over medium heat.
Salt and pepper to taste.
Add the tomatoes, thyme and garlic.
Cover and simmer over low heat for 25-30 minutes.
Taste and adjust seasoning if necessary.
Place the ratatouille on a bed of pasta and add Parmesan cheese before serving.
Can also be served as a side dish, in ramekins.
