Tomapure grape tomatoes and spinach gratin

Cooking time: approximately 30 minutes

1 small onion, chopped
2 garlic cloves, finely chopped (1 ½ teaspoons of garlic from a jar)
2 tablespoons (30 mL) of olive oil
6 oz (170 g) of spinach
Salt and pepper, to taste
2 teaspoons (10 mL) of pancetta, chopped
1 tub (320 g) Tomapure grape tomatoes
½ cup (130 g) grated cheese

Preheat oven to 400°F (200°C).
In a large skillet, cook the onion and garlic in oil.
Add the spinach.
Salt and pepper to taste.
Add the pancetta and cook a few minutes, until spinach softens.
Place the mixture into a baking dish.
Add the tomatoes.
Top with cheese.
Bake until cheese is melted (about 30 to 40 minutes).
